The first Paolo's Gelato opened in Atlanta in 1999. Paolo Dalla Zorza--a native of Treviso, Italy--studied under gelato masters in Italy, Germany, and Spain to get his recipes perfect. Paolo's was the first authentic gelataria in Atlanta, with Italian flavors and freshly made gelato the old-fashioned way: no instant mixes, only the freshest fruits, vegetables, and ingredients go into Paolo's gelato.

Perhaps the most distinctive element to Paolo's Gelato is the ability to weave such intense flavors into such a light dessert. Milk-based gelato contains less than 7% fat, while fruit-based gelato contains less than 2%.
